If you want great wheat or corn flour, look into finding the brand and buy Hudson Cream. I’ve went through a lot of brands over the years. This is the best. I’ve went between the cheapest store brand to the most expensive organic flours available to me. When it comes to consistency, reliability, taste and quality, it always comes down to the brown cow flour.
For those local to me and that have tried my baking, they always ask how I manage to get such nice texture. Sometimes comes down to the quality of the ingredients more than skill. My grandma always really loved Hudson.
When I got older, I used the cheapest out there as I didn’t bake all that much. I honestly think you don’t really care until something goes wrong or tastes bad. And things did go wrong. That flour had a massive recall a few years ago and instead of correcting the contamination, they stuck a warning label on their bags. Seriously, how many of you fans of raw cookie dough still mourn raw flour is off limits? I still can’t look at cookie dough without a bit of sadness.
Thus began a long search for a better option. I became a bit snobby, believing spending nearly $10 for a 5 pound bag of flour meant superior quality. It also meant I baked a lot less.
Ironically, that “superior” company also has several recalls for contamination. So I did some digging. There has to be a good flour that isn’t constantly under recall for poor farming and harvesting practices. With a little research, I found an interesting tidbit. Turns out the snobby flour is the same flour as my previous cheap brand but with fancier packaging. Another victim of marketing.
In fact, start digging, and you will find most of the brands out there are owned by about 5 mega corporations. So my advice is to buy what you can afford and don’t waste your time worrying about how much you spend. Look for small companies that focus on quality. I’m happy to say I found such a company in an affordable bag.
One day, after my latest flour turned out to be full of mold, I went to a local store and saw the familiar Jersey cow. I decided to buy a bag and try it out. After all, if my Grandma bought it, it had to be okay. I baked biscuits and they were the most tender, fluffy biscuits I had eaten since I was a child. Turns out my grandma’s secret recipe was to buy Hudson Cream flour.
