Learn About Us

Our Beginning

We are here to bake, create recipes and share our mishaps in the kitchen as we stumble through this life.  While in recovery, I watched a lot of baking shows to pass the time. The speech and physical therapists said to keep moving forward, so I picked up a mixer one day and started baking.  Then, I started documenting my baking adventures both on this website and on youtube.  Over the years, we have even established wonderful friendships.

Here at Jackson’s Job, we like to try and reduce calories, fat and sugar whenever possible on classic baked goods from our childhood.  Appalachian baking will be a common theme with a modern twist to emphasize flavor without so many calories. By making small changes, you can still have delicious country cooking in a much healthier way. 

In addition, we will be referring to some of my favorite cookbooks and seeing if it is possible to modify tried and true recipes to be healthier.  We will be pushing the boundaries of sugar and fat of classic recipes to see how or if we can save calories.  Some recipes can be really heavy on sugar and fats when they don’t need to be.  We often miss out on the subtle complexities of many dishes simply because we are too heavy on the salt, fat and sugar.  We aim to fix that.  

Who is Jackson?

The term “Jackson’s Job” is a nod to my service dog, Jackson. Jackson is a rat terrier and chihuahua mix we found at a local shelter years ago.  Thanks to Jackson’s amazing abilities, I am finally able to challenge my disabilities and work around them.  Jackson is a smart little dog with a big job.  He is also affectionately called the baking service dog because he will supervise, inspect and tell me when it is time to take breaks.

If you want to see more of Jackson, be sure to subscribe to his youtube channel as he often makes a guest appearance looking for dog friendly scraps in the kitchen.  Along with Jackson, you will see macaron Maggie, debonair Ray, incorrigible Luke and sneaky Scout.  We are a pet friendly family that often bakes snacks for our four legged companions, so check back often for news on the crew.

How to Navigate

I tried to set this up to be a very simple to navigate site in order to share recipes with family and friends. You can use the the search feature (look for the magnifying glass icon and search boxes throughout) for a quick way to find a particular recipe based on ingredients or title. Try typing “chocolate” and see what pops up!

In addition, we set up two new sections that we are excited about sharing with you all. They are called “What’s Baking” and “Recipe Box.What’s Baking is all the latest posts about baking and newest recipes. In contrast, the Recipe Box has all the recipes on the entire site grouped by various categories such as bread, cakes and cookie recipes.

If you are new to baking, try out our Easy Recipes section first. There are lots of cakes, cookies and baked goods that are quick, fast, simple and delicious.  Looking for something lighter but still extremely tasty? Check out our Healthier section.
