By relying on vegetable oil for the main source of fat, you really cut down on the saturated fats and cholesterol while introducing healthy fats to your diet. So go ahead and eat two slices. You deserve it. Not only will you enjoy this devil’s food cake recipe, you’ll love how easy it is to bake!

It is as simple as mixing the dry ingredients together, then mixing up the wet ingredients. Add these two mixtures together and tada! You have one of the best chocolate cakes ready for the oven. You don’t even need a mixer for this simple recipe. An ordinary whisk and a couple bowls will do. Let’s get to baking!

Ingredients

For the Cake

  • 1 cup (150g) flour
  • ¾ cup (180mL) milk
  • ¾ cup (150g) sugar
  • ¼ cup (60mL) oil
  • 1 large (50g) egg
  • ½ cup (40g) cocoa powder
  • 1 tsp (5mL) vanilla
  • ½ tsp (3g) baking soda
  • ½ tsp (2.5g) salt

For the Glaze

  • 1 cup (125g) powdered sugar
  • 1-3 tbs (15-45mL) milk
  • 1 tbs (5g) cocoa powder
  • ¼ tsp (1.25g) salt

Instructions

  • Preheat oven to 350F (180C.)
  • Grease and flour one 8" (20cm) cake pan or line with parchment paper.
  • Combine flour, cocoa, sugar, baking soda and salt in a small bowl. Set aside.
  • In a large bowl, beat egg, oil, milk and vanilla until smooth.  Add flour mixture and beat until you no longer see lumps, about 1 minute.  Pour immediately into prepared pan.
  • Bake 30 – 40 minutes or until toothpick inserted in center comes out clean. Center should read between 190F (88C) and 210F (99C.)
  • Cool in pan on wire rack.

Chocolate glaze

  • Combine powdered sugar, salt and cocoa in a small bowl. Add milk, one teaspoon at a time, stirring until desired consistency is achieved.
  • Spread on top of cake. Allow icing to dry before serving.
