Chocolate lovers, rejoice! Not only is this little muffin packed full of chocolatey goodness, but it is super simple to make. Ready in less than 1/2 hour from start to finish, your family will be begging for seconds. If you want to learn how to make decadent chocolate muffins, follow along. I have friends and family that love chocolate and I’m always trying to find was to satiate their appetites while still limiting high amounts of sugar and fats. Chocolate can be tricky to work with and stay low in calories, so I rely a lot on cocoa powder. It is low in fat and calories, has a good amount of protein and lets you add in a nice rich chocolate flavor cheaply. You can go from a nice mellow milk chocolate to a dark and demanding attention chocolate with just a few teaspoons. The trick is getting enough moisture so the cocoa powder doesn’t dry out the baked goods.
Now these are very rich and delicious, but a little higher in calories than I normally suggest. If you want a lighter version, there is an equally good chocolate muffin recipe found here that is less in calories and saturated fat. Decadent Chocolate Muffins
Ingredients
- 1 ½ cups (225g) flour
- 1 cup (200g) sugar
- ¾ cup (180mL) milk
- ¾ cup (180g) chocolate chips
- 2 large (100g) eggs
- ⅓ cup (80mL) olive oil
- ½ cup (40g) cocoa powder
- 1 tsp (6g) baking soda
- 1 tsp (5mL) vanilla
- ½ tsp (2.5g) salt
Instructions
- Preheat oven to 400F (200C.)
- Grease or line a muffin tin with paper cups.
- In a large bowl, sift together flour, sugar, cocoa powder, baking soda and salt.
- In a smaller bowl, combine milk, eggs, oil and vanilla. Pour wet ingredients into dry, mixing until just combined. Fold in chocolate chips.
- Divide batter equally into each muffin tin, about 3 tbs.
- Bake 16 – 19 minutes or until a toothpick inserted in the center comes out clean.
