Quick and Easy Chocolate Cake
Ingredients
- 2 cups (400g) sugar
- 2 cups (300g) flour
- 1 ½ cups (360mL) buttermilk
- ¾ cup (180mL) oil
- 2 large (100g) eggs
- ½ cup (40g) cocoa powder
- 1 tsp (5mL) vanilla
- 1 tsp (6g) baking soda
- ½ tsp (2.5g) salt
Chocolate Glaze
- 1 ½ cups (187.5g) powdered sugar
- 2 tbs (10g) cocoa powder
- ¼ tsp (1.25g) salt
- 3 tbs (45mL) milk
Instructions
- Preheat oven to 350F (180C.)
- Grease and flour a 9×13 (23x33cm) cake pan or line with parchment.
- Combine flour, cocoa, sugar, salt and baking soda in a large bowl. Break up any clumps with a whisk, fork or sifter. Set aside.
- In a separate bowl, beat buttermilk, oil, vanilla and eggs. Pour liquid in flour mixture and beat until just combined and there are no lumps. It will be a thin batter. Pour immediately into baking dish.
- Bake 45-60 minutes or until toothpick inserted in center comes out clean. Center should read between 190 – 210F (88 – 99C.)
- Cool in pan on wire rack before icing.
Chocolate glaze
- In a small bowl, combine powdered sugar, salt and cocoa. Add milk, one teaspoon at a time, and stir until desired consistency is achieved.
- Spread glaze evenly on top of cooled cake. Allow to dry several minutes before serving.
