Ingredients
2cups(400g) sugar
2cups(300g) flour
1 ½cups(360mL) buttermilk
¾cup(180mL) oil
2large(100g) eggs
½cup(40g) cocoa powder
1tsp(5mL) vanilla
1tsp(6g) baking soda
½tsp(2.5g) salt
Chocolate Glaze
1 ½cups(187.5g) powdered sugar
2tbs(10g) cocoa powder
¼tsp(1.25g) salt
3tbs(45mL) milk
Instructions
Preheat oven to 350F (180C.)
Grease and flour a 9x13 (23x33cm) cake pan or line with parchment.
Combine flour, cocoa, sugar, salt and baking soda in a large bowl. Break up any clumps with a whisk, fork or sifter. Set aside.
In a separate bowl, beat buttermilk, oil, vanilla and eggs. Pour liquid in flour mixture and beat until just combined and there are no lumps. It will be a thin batter. Pour immediately into baking dish.
Bake 45-60 minutes or until toothpick inserted in center comes out clean. Center should read between 190 - 210F (88 - 99C.)
Cool in pan on wire rack before icing.
Chocolate glaze
In a small bowl, combine powdered sugar, salt and cocoa. Add milk, one teaspoon at a time, and stir until desired consistency is achieved.
Spread glaze evenly on top of cooled cake. Allow to dry several minutes before serving.
Notes
The type of pan can affect cooking temperatures. Heavy casserole baking dishes can take longer to heat up and can add an additional 5 - 10 minutes cooking time. Thin pans such as disposable aluminum can take as little as 30 minutes to bake.
