Macaron Mishaps #4: Footless and Puffy

Continuing my lesson on the search for the perfect macaron, I will now discuss footless and puffy cookies. Since I’m now trying this for the fourth time, I’m getting smart. Starting by taking notes, pictures of the process and changing only one thing at a time.

I took the time to weigh the ingredients, beat the eggs until I got the stiff peaks they continuously spoke of on countless videos and blogs, folded until I got a nice figure 8 as they said to look for and rested until I could “pet” the cookie without transferring batter.

So, I was really excited as I waited for the cookies to bake. This time, I didn’t even peak as I knew this was it! I was imagining eating the little beauties within the hour. They would be delicious. They would be amazing. This was definitely going to work!

And…it so didn’t. This is getting annoying! Now, not all the macarons were footless and puffy. Some had sad little feet, some had half a foot. Some were also flat and cracked. They were all hollow. Macarons are getting on my nerves. But I have a plan. Onto stage five. Will I ever get there?
