Classic Sugar Cookies are Fantastically Easy

My favorite cookie is a store bought sugar cookie. I almost hate to admit that. It’s because of the memories it evokes. With just one bite, I remember going to our local grocery store as a small child and my brothers dragging me straight to the bakery. They gave out free cookies to children. I was always shy, conscious of money troubles my mom had, so I picked the cheapest cookie they sold. I felt bad taking things that cost a lot of money as I thought all adults struggled with money like my folks. Looking back, I was a sweet child like this cookie.

It’s really easy to make classic sugar cookies. Butter, sugar, egg, flavoring, and a bit of flour and it’s ready to bake. There aren’t a lot of steps. Cream the butter and sugar by mixing together. Add in the egg and vanilla. Stir in the salt, baking soda and flour. Spoon heaping tablespoons onto a baking sheet. Bake a few minutes and you are done! It’s really one of the most rewarding cookies to make.

Classic Sugar Cookies

A basic shortbread modified to create a pleasant sugar cookie. Not too sweet, full of butter and simple ingredients most bakers always have on hand.

Ingredients

  • 1 ⅓ cups (200g) flour
  • ¾ cup (150g) sugar
  • ½ cup (113g) softened butter
  • 1 large (50g) egg
  • 1 ½ tsp (7.5mL) vanilla
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.25g) salt

Instructions

  • Preheat oven to 375F (190C.)
  • Combine flour, baking soda and salt in small bowl.
  • In large bowl, beat softened butter and sugar until creamy.  Beat in the egg and vanilla until smooth. Stir in flour mixture just until blended. 
  • Drop 1 tbs of batter onto cookie sheet 2" (5cm) apart.
  • Bake 8 – 12 minutes or until edges are golden brown.  Cool on baking sheet for 2 minutes; remove to wire rack to finish cooling.
