The Search for Pumpkin Bread Continues

Between the months of September through the end of November, I have attempted and failed at making over a dozen loaves of pumpkin bread. The goal was to have one for the morning of Thanksgiving as a nice treat while everyone waited for supper to be ready. The search for pumpkin bread started in earnest as Thanksgiving drew closer.

Recipe after recipe, I just couldn’t find a decent bread. Some were gummy despite being in the oven for over two hours, others really dry like toast, and most were sickly sweet. Almost all of them were overly spiced with cinnamon and so full of sugar, you couldn’t taste pumpkin. I managed to make one decent loaf, but it wasn’t what I was looking for as it was very sweet. It just tasted like cake more than bread.

Time to put this recipe on the back burner and revisit at another time. After all, it was planned for Thanksgiving and that was days ago.
