Chocolate Banana Muffins Recipe

Chocolate banana muffins are a fun way to start the day. Full of banana flavored chocolate, these muffins are easy to make. Or actually, it’s a great snack anytime of the day. Less than 300 calories, this muffin packed full of flavor isn’t going to break your diet, either.

This is a simple recipe to make. Make chocolate banana muffins by hand without a mixer. A few bowls, a spoon and a muffin tin is all you need. You’ll spend more time doing the dishes than creating the recipe. Within 1/2 hour, have a delicious and nutritious muffin in your hand ready to eat.

You can substitute the flour for gluten free or low carb flour quite nicely. Almond or rice flour works out really well. Add in some nuts, dried fruit or chocolate chips to customize them. First, prepare your pan.
Next, look for bananas just lightly speckled. These will taste the best.

Place all the dry ingredients in a small bowl.

Next, mix and set aside.

Then, mash up your bananas.
You can mash them as much as you like.
Add the wet ingredients and stir.

Mix until just combined.
Chocolate Peanut Butter Chip Muffins
Equally divide the batter.
Bake and cool.

Chocolate Banana Muffins

Ingredients

  • 2 large (218g) mashed bananas
  • 1 cup (150g) flour
  • ¾ cup (150g) sugar
  • 2 large (100g) eggs
  • cup (80mL) oil
  • ½ cup (40g) cocoa
  • 1 tsp (3g) baking soda
  • ½ tsp (2.5mL) vanilla
  • ½ tsp (2.5g) salt

Instructions

  • Preheat oven to 400F (200C.)
  • Grease or line a muffin tin with paper cups.
  • Sift together flour, sugar, cocoa, baking soda and salt in a medium bowl.
  • In a separate bowl, mash bananas with a fork. Mix in eggs, oil and vanilla. Add dry ingredients and stir until just combined.
  • Divide batter equally into each muffin tin, about 3 tbs.
  • Bake 16 – 20 minutes or until a toothpick inserted in the center comes out clean. Center should reach 200F (93C) when done. Leave in pan 5 minutes before removing to wire rack to finish cooling.

Notes

You can add up to 1 cup (113g) chopped nuts for added flavor and texture.
You can use self-rising flour.  Simply replace with equal amounts and omit the salt and baking soda.
