This is a simple Madeira inspired cake with the traditional cracked top. It utilizes freeze dried strawberries to punch up the flavor without a lot of additional calories. No special equipment needed; just a loaf pan, a whisk or a fork and a large bowl!

Ingredients
1 ½cups(225g) flour
4large(200g) eggs
1cup(200g) sugar
¾cup(180mL) oil
1tsp (5mL) strawberry extract
1tsp(2g) freeze dried strawberry powder
1 ½tsp(6g) baking powder
½tsp(2.5g) salt
3-6dropsred food coloring (optional)
For the Glaze
1cup(125g) powdered sugar
1 - 2 tbs(15-30mL) milk
¼tsp(1.25mL) vanilla or strawberry extract
Instructions
Preheat oven to 325F (160C.)
Grease and flour a 9x5 (23x13cm) loaf pan or line with parchment paper.
In a small bowl, mix flour, baking powder and salt. Set aside.
In a large bowl, beat eggs, oil, and strawberry extract until smooth. Beat in sugar and strawberry powder. Add flour mixture and beat until you no longer see lumps, about 1 minute. If desired, mix in a few drops of food coloring until it is a dark pink. Pour into prepared pan.
Bake 50 - 60 minutes or until the sides just separate and a toothpick inserted comes out clean. Center should read between 200F (93C) and 210F (99C.)
Cool in pan for 10 minutes; remove to wire rack to finish cooling.
Icing
In a medium bowl, mix together powdered sugar, vanilla and milk, one teaspoon at a time, until desired consistency is achieved. Spread evenly over cooled cake.
Notes
You can make your own strawberry powder with freeze dried berries by pulsing in a blender for 30 - 60 seconds.
