Rich chocolate caramel sauce makes these peanut butter oatmeal cookies outstanding. They are made on the stove top within minutes. Often referred to as surprise cookies or preacher cookies because they are so quick and simple to make for last minute guest. And delicious, too!

Ingredients
3cupsoats (240g)
1 ½cupssugar (300g)
½cuppeanut butter (132g)
½cupmilk (120mL)
½cupbutter (113g)
¼cupcocoa (20g)
1tspvanilla (5mL)
1tspsalt (5g)
Instructions
In a small bowl, stir together cocoa and sugar.
Place sugar, butter and cocoa in a 3 quart sauce pan. Heat on medium until mixture starts boiling, stirring constantly to dissolve sugar and cocoa. Continue to cook, stirring occasionally until mixture reaches softball stage 235F (113C.)
Remove from heat. Quickly stir in oats, peanut butter, vanilla and salt. Carefully place a heaping tablespoon onto a sheet of parchment or wax paper. Allow to sit untouched until cool, about 30 minutes.
Notes
Many recipes out there will tell you to cook this for 1 minute after it comes to a rolling boil. This is dependent on the stove and could cause your cookies to not set up.Over cooking will lead to dry crumbly cookies. It's best to slightly under cook them and place them in the fridge to firm up than to have dry cookies that will be difficult to form.If you don't have a thermometer, after a rolling boil develops, start checking every 30 seconds by dropping a small amount of syrup into a cold glass of water. Once a ball forms, it's ready.
