A quick and easy dairy-free version of the classic chocolate chip cookie! This is fabulous for anyone with dietary restrictions that still wants to enjoy this iconic American cookie.

Ingredients
1 ¼cups(187.5) flour
¾cup(169.5g) dairy-free chocolate chips
½cup(96g) vegetable shortening
⅓cup(67g) white sugar
¼cup(56g) brown sugar
1large(50g) egg
½tsp(3g) baking soda
½tsp(2.5mL) vanilla
½tsp(2.5g) salt
Instructions
Preheat oven to 375F (190C.)
Combine flour, baking soda and salt in small bowl.
In large bowl, beat shortening and sugar until creamy. Beat in the egg and vanilla until smooth. Stir in flour mixture just until blended. Fold in chocolate chips.
Drop 1 tbs of batter approximately 2" (5cm) apart on a baking sheet.
Bake 8 – 12 minutes or until edges are golden brown. Cool on baking sheet for 2 minutes; remove to wire rack to finish cooling.
Notes
For a thinner cookie, reduce temperature to 350F (180C) and bake 10 - 14 minutes.You will need to do some shopping around on the chocolate chips. Many like to use milk fat in place of cocoa butter, so read the ingredients on the bag carefully to keep these chocolate chip cookies dairy free. If you cannot find dairy free chips, look in the candy bar isle and use a high quality chocolate bar(s) in equal weight that is without dairy.
