An easy chewy chocolate cookie that reminds you of brownies. Try adding powdered sugar for a nice contrast. These are delicious as they are but you are welcome to add in some nuts or dried fruit to take the flavor further.

Ingredients
1 cup(150g) flour
½cup(96g) shortening
½cup(100g) white sugar
¼cup(56g) brown sugar
1large(50g) egg
¼cup(20g) unsweetened cocoa
1tsp(5mL) vanilla
½tsp(3g) baking soda
½tsp(2.5g) salt
Instructions
Preheat oven to 350F (180C.)
Combine flour, cocoa powder, baking soda and salt in small bowl.
In large bowl, beat shortening and sugars until creamy. Beat in the egg and vanilla until smooth. Stir in flour mixture just until blended.
Drop 1 tbs of batter approximately 2" (5cm) apart on a baking sheet.
Bake 8 - 10 minutes. (They will be soft in the center. Do not over bake.) Cool on baking sheet for 2 minutes; remove to wire rack to finish cooling.
Notes
Sprinkle top of cookies with sea salt when the first come out of the oven. It takes chocolate up just a notch in flavor.
