Ingredients
½ cup(120g) sugar
2large(60g) egg white
Instructions
In a double boiler, bring 1" water to a low simmer. Add the egg whites and sugar to the top.
Constantly stir until mixture gets up to 160F (71C) and sugar melts.
Carefully remove from heat, transfer mixture to a clean bowl. Beat on low speed for one minute. Turn mixer up to medium and continue to beat egg whites until the meringue cools and desired peak is achieved.
Notes
To create a double boiler, you will need a heatproof bowl that will sit on top of a sauce pan and is easily removed. Stainless steel is recommended. In a sauce pan, bring 1" water to a low simmer. Then place the pan top, ensuring the bottom of the bowl does not touch the water's surface. Never allow the water to boil. Adjust the heat as needed. Wear oven mitts or use pot holders to remove the pan and remove away from your face to avoid steam.
