In reply to <a href="https://jacksonsjob.com/classic-sponge-cake-with-oil/#comment-6484">Mary</a>.

Hello Mary, You likely did nothing wrong. It just needed to bake longer. I am sorry that the cake didn't fully bake for you. That's always disappointing.

When it comes to the time, I give a general baking time guideline based on my oven and type of pan I use. It is possible your oven runs a little cooler than mine. The type of bakeware can also slow down cooking. Glass and ceramic will take much longer than the aluminum or steel pans I typically use. A better gauge is to use a thermometer and the baking temperatures I provided, or a toothpick inserted in the center. This will allow you to get a fully baked cake in the future. The toothpick will only tell you the cake is baked, but not over-baked, so I prefer the temperature method. You'll ensure a perfectly baked cake every time by taking it's internal temperature.

Farah,

Yes, you can use an electric mixer. When you add the flour, only mix it until its combined and you don't see large lumps. If you overmix it, you will have lots of tunneling (air pockets) throughout the cake.

Plain. You can use self-raising, but you'll want to eliminate the baking powder and reduce the salt by 1/2 if you do.

Pen, you can cook over charcoal provided you can adjust the position of the pan as it cooks so it will not overbake the outside before the interior is fully baked.
